Magical Calendula Muffins

Calendula is often used as a medicinal herb but it is also a great edible flower to add to your food. The petals are high in flavonoids which help the heart to stay healthy. And of course, they are just fun to cook and bake with…

Wet ingredients

½ cup of (coconut) oil
1/3 cup of maple syrup (or honey)
1 tsp vanilla extract
2 eggs
1 pear or apple
A handful of calendula flower petals
Dry ingredients

2 cups of whole wheat flour
1 tsp baking powder
A little bit of salt
Cut the apple or pear in small pieces. Take a little bit of the oil and lightly brown the pear pieces in a pan with the oil.

Mix all the wet ingredients together. Add the pear pieces and the calendula petals.

Mix all the dry ingredients together.

Combine everything.

Spoon batter in greased muffin pan. Bake at 350 for about 25 minutes or when toothpick comes out clean. Taste best when eaten right away but they store pretty well for a couple of days.
